“McCollum shared a terrific cherry ginger salad of mixed greens, squash ribbons, carrot, radish and a cherry-ginger vinaigrette, that’s ideally portioned to serve as a shared side for two and perhaps three. I eat salad, but it doesn’t often thrill me enough to recommend one. This is an exception to that rule. Of the three ramen dishes on offer, McCollum brought me the garlic miso ramen with pork belly, pig-foot terrine and ham jam. Bathed in a rich pork and chicken dashi stock, it is a complex and solid dish.”

“Just like the rest of the country, over the past few years Louisville has seen a huge uptick in ramen and noodle spots. This neighborhood joint really ties the trend to the South by pairing it with fried chicken, Asian-inspired fried chicken that is. Sweet soy, hot (jeaw bong), extra hot and peppercorn fried chicken featured on the menu along with a couple different pho and ramen options as well as creative sides like kimchi mac ‘n’ cheese. As is the theme throughout town, bourbon cocktails are available to wash it all down.”
