Aenith Sananikone-McCollum | Owner
A refugee from Laos, Aenith. The first generation to graduate from college, Aenith gained a BS in Business Management in Morehead, Ky. and later enrolled in Culinary School at Sullivan University. She loved learning about cooking and wanted to explore more outside of Kentucky. She transferred to the Culinary Institute of America in Hyde Park, NY where she met Jason. After graduating from CIA, Aenith went to work in Catalina Island where she worked garde manger and sauté station and eventually moved to the FOH after tying-the-knot with Jason.
Jason McCollum | Chef/Owner
Originally from San Angelo, Texas, Jason went to study marine biology at Texas A & M, Corpus Christy immediately after high school, but in his heart knew he really had a passion and talent for cooking. Jason met Aenith Sananikone while attending the Culinary Institute of America in Hyde Park, New York. Jason has had experience opening and operating restaurants in NYC, Nashville, Seattle, Los Angeles, and Louisville.
Scott Edwards | Sous Chef
A native of Kentucky and die-hard Louisville Cardinal fan, Scott has over 15 years of experience working in the culinary industry. Before joining the Chik’n & Mi family, Scott worked for over two years as sous chef at modern Vietnamese restaurant, Basa, led by Chef Michael Ton.
April Gibbs | Cocktail Manager
A Louisville native, April has been in the restaurant industry for nearly seven years with experience from La Coupe where she was trained by Jacquelyn Zykan (Master boubon taster for Old forester) and Proof on main. Prior to working at Chik’ N Mi, April was with Walt Disney World where she learned that guest satisfaction was the key to success. April has a passion for helping customers with dietary needs.
Lucas Worley | Bar Manager
A native of Portland, Oregon Lucas quickly gained experience working in the craft beer scene. After working behind the beer bar at Belmont Station, Lucas moved to Louisville in 2012 to join local alternative rock band, Artifex Pereo, as the lead singer. Lucas worked at the Louisville Beer Store upon his arrival to Louisville working closely with owners Lori Beck and Tyler Trotter of Holy Grale and Gralehaus and in the winter of 2016 started working closely with Jason and Aenith’s new restaurant concept.
